Well, I made it through Cinco De Mayo without completely over indulging. I went to a party and ate a small serving size of chips and queso and quacamole (which I loveeeee). Today was a pretty healthy day. My stomach has been kinda queasy so I've been prone to excessive laziness. But, I plan on doing some Prenatal Yoga (which is great for digestion) after my dinner settles. I made some awesome Talapia for dinner and I will most definitely be sharing the recipe which is mostly made up. But, it was super delicious and very low calorie. I am feeling pretty good about how I have been eating. I have been mostly avoiding high calorie sweets, sodas and juices. Which I feel is definitely paying off! I have another Doctor's appointment on May 27 and I am looking forward to seeing how the baby is progressing and definitely weigh again!!!
Delightful Talapia Recipe
Ingredients
Desire amount of Fresh of Frozen Talapia
Half of a fresh lemon
Low sodium soy sauce
Low calorie Asian dressing
Lemon Pepper
Seasoning Salt
Foil
Baking Directions:
Thaw fish and rinse in cool water. Place fish in plastic bowl with enough soy sauce and asian dressing to cover fish. Cover bowl in plastic and place in refridgerator to marinate for desired amount of time ( I would recommend 1-2 hours). Preheat over to 4oo degress. Remove fish from the oven and into a glass pyrex baking pan. Caver pan with foil. Poke a few holes in foil. Cook for 15-30 (depending on size of Talapia flanks) until fish is white and flaky and delicious!!
